You didn't say what version of Word you're using but no
matter what it is you need to tell it what parts of your
text are in what language. The easiest way is to toggle
between (or among) language keyboards. The recent versions
of Word keep track of language changes when you do that.
It's possible to write all the languages you say you're
using from any one of those language keyboards however so in
your case you'd have to define a block of text and then
Tools > Language > Set language and pick the language you
want. This is clumsy however if you're using it to mark a
lot of individual words or sentences. You can also put a
"Change language" drop-down menu on one of the tool bars and
this makes the process slightly easier. Another way (which I
don't use) is to define different styles in which everything
is the same except for the language: Style 1 is English,
Style 2 is Spanish and so on. You can then switch between
languages as easily as you can change styles.

The one thing you CAN'T do is to trust Word to detect
languages automatically and you should be sure to have
automatic language detection turned off.

Using the toggle keyboard system (left alt + left shift
switches to the next language) I regularly compose documents
with English, Turkish, and French words and sentences
intermixed and the spelling checker breezes right through,
them catching and correcting mistakes in each language as
appropriate.
