The Updating Fields Before Printing option is already unchecked. So it must
be something else. Any ideas?

Most likely you have one or more fields in the document, and the "Update
fields before printing" option is checked in the Word Options > Display
dialog. If the updating of the fields causes any change in the content of
the document, the digital signature (which is a mathematical function of the
document content) is no longer valid.

Try unchecking that update option.
