This is really more of a Windows issue than a Word issue, but this
should get you started...
Make sure the account(s) used by the students do NOT have
administrator privileges on the machine that holds the share. For
convenience, add the account(s) to a user group that you create for
this purpose and remove them from any other groups.
Right-click the folder, select Sharing & Security, and go to the
Security tab (this is Windows XP; I'm not sure what differences there
are for other versions). Select the student group and click the
Advanced button. In the next dialog, select Special Permissions for
the student group and click the Edit button. In the third dialog,
specifically deny permission for Delete Folders/Files, Delete, Change
Permissions, and Take Ownership.
This should stop students from deleting their own or others'
documents. The problem is that it will also stop Word from deleting
its temporary files in the same folder, and they'll accumulate.
Someone with Administrator rights will have to clean them out at least
weekly (see http://www.gmayor.com/what_to_do_when_word_crashes.htm).
