Isn't the latter occurrence of "Emphasis" in the sentence you're
quoting displayed in italics in Help?

I currently don't have access to Word 97, but in Word 2000 the
complete context help text for "Replace *bold* and _italic_ with
real formatting" (on the AutoFormat As You Type tab of the
Tools>AutoCorrect dialog box) is the following:

"Applies bold character formatting to words enclosed in asterisks
(*), and applies italic character formatting to words enclosed in
underscore characters (_). For example, Word changes *Strong* to
Strong and _Emphasis_ to Emphasis."

What you say is not correct.  The contextualized help item for
that AutoFormat feature says:
"Word changes _Emphasis_ to Emphasis."
