Wouldn't be even easier to just have a free text editor, so that I can
remove wordpad from next bunch of production boards ?

I move around with my USB key, run the text editor on the key to analyze
logs and eventually change config files.

Do you know one?

graphic interface only for debug purposes, but in order toactivate debug

Any hint?

If everything you have to do is edit simple and short text files (ex:
configuration files) you may load the text file in a multi-edit text
control.
This will support selection, cut&paste and other minimal editing
features.
It will be not so difficult to add search and search and replace
capabilities.
