Also, is there any way to observe the download and installation? Sometimes
that happens from AU, but most of the time it doesn't.

You could do that with bitsadmin (from a cmd window).
E.g. enter there:

bitsadmin /monitor /allusers

Otherwise you can doubleclick on the AU icon in the Systray and get
an indication of progress from it. Also, of course you can inspect
the WindowsUpdate.log periodically to see what it is reporting.
This coarser log may also be of some help:
%windir%\SoftwareDistribution\ReportingEvents.log
but you can find anything that it reports in the more detailed log
anyway just by doing finds in it for Report Event (e.g. using Find Up
starting from the bottom.)

BTW regarding XPsp3 in particular I noticed that it seems to get
stuck in a suspended state and AU may not be able to get it going again.
In that case I used bitsadmin to force the download to resume.
And when I did that early on in the download of XPsp3 it only resulted
in that piece of its download being completed but at least it resumed
on its own again some time later. See some of my other recent posts
about bitsadmin for more details on the technique.

And how would I stop the download if I wanted to? I don't see any way to do that.

With the AU icon? Just right-click Suspend.
Without the AU icon? Again, you probably could use bitsadmin;
however, I have only experimented so far with its /resume command
for the workaround I mentioned above.

BTW I find it very useful to leave the AU icon locked in the Notification area.
E.g. click Always show on an AU icon item in the Custom Notifications dialog
via right-click Taskbar Properties.
