I just did the same thing yesterday but I tested it in my WinXP virtual PC.
IE8 Beta should be listed in Add/Remove Programs as "Windows Internet
Explorer 8 Beta 1".

I installed IE8 Beta and now want to use IE7. I have tried the Emulate IE7
box on IE8--does not work. I have tried to unistall by going through Add
or
Remove Programs--IE does not show, even when I include Show Updates. No
IE
versions show at all. I am using XP home.
