I have AU set to download and notify, as I prefer to vet updates before
installing them. Lately the 'updates ready' icon never appears, but on
shutdown I get the notification and the 'click here to shutdown
without......' so I can't check what MS have sent me. Does anyone know if
those sneaky (insert preferred expletive) at MS have done this on purpose to
stop people like me vetting updates?

Instead of shutting down, restart the computer and wait. Soon after, the balloon will appear and you can click on the AU icon and select a custom install.
