1. I think you can use, within any OpenOffice application,
Tools->Options->Load/Save->MicrosoftOffice to de-associate OpenOffice with
Microsoft file formats, by clearing all the check-boxes.

2. You can use control panel "Folder Options" -> "File Types" to
re-associate the file extensions (such as .doc) with the applications that
you desire. Navigate to the extension, click "Change", select the desired
application.
