I don't know the solution to this (probably a patch from Microsoft) but I
noticed the same behavior. The pop3 address is changed from what I want to
"localhost" or IP address 127.0.0.1. I can reset things to the proper
information and all is well until I reboot the computer. This probably plays
heck with laptop users who reboot fairly regularly.
