Is the "In progress" listed in the Windows Update history? If so this is
expected since the service pack needs to restart the system in order to
finish installation and after the restart Windows Update is longer active
therefore unable to verify installation. If the service pack fails to
install it will produce an installation error.

To verify Windows XP SP1 is installed

Click Start > Run
Type "Winver" (w/o quotes)
Press OK

You should get the version number including SP1
