Licensing Confusion

I have a client with 5 servers. One server runs Terminal Services on
a Win2K box. The second server runs Terminal Services on a Win2K3 box.
I just started working with this client so I have very little
information on them.

From what I gather all users connect to the Win2K box using TS. The
second server one user just remotes to. Since the second server is
telling me I need to buy TS licenses I figured I would do something
smart....I would just remove TS from there, and let RDfA kick in.
Here's the problem....

Since TS uninstalls any programs installed while in TS mode it could
possibly uninstall the billing software they use. My question is...how
can I tell what programs were installed after TS was installed? Also,
how can I tell what machines run TS and would need licenses in the
future other than logging on to each machine and "hunting" for the
information?
