Printers:

Network printer connections are stored in the user profile. Client
printers are connected at logon. Printers manually mapped to a port on
the client should be stored in the user profile, too.

That means you just have to migrate user profiles. You are probably
currently using local profiles. If you cannot switch to roaming
profiles you have to copy the local profiles from the old server to
the new server. It could be done like this:

a) Create a backup of the folder "Documents and Settings" on the new
server.
b) Copy the relevant subfolders of "Documents and Settings" from the
old server to the new server including permissions (you could use
robocopy for that).
c) Make a backup of <HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows NT
\CurrentVersion\ProfileList> on the old server.
d) Export <HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows NT
\CurrentVersion\ProfileList> on the old server and import it on the
new server. Be sure to only include entries for your users, not for
System, LocalService or NetworkService.
e) Check if everything went OK by opening the user profiles tab in the
system properites.
