Apply the updates manually to a test server that is identical to your production server(s). Test to make sure that everything appears okay.
You should have a solid backup/restore strategy in place for your production machines. For example, if you ever have a problem you should be able to restore the server back to a known working image in about 30 minutes.
If the updates test okay, apply them manually to your production machines during scheduled maintenance and test again.
If you have any problems, do a restore.
