to answer my own question, in case anyone else comes up against this
problem...
All I had to do was change the driver to Generic / Text Only. I did
this in the printer properties dialog, but you could probably achieve
the same thing using a Printer Driver mapping.

I have an Epson Tm-T88IV Receipt Printer, it works fine on the local
network but will not print from within a Windows Server 2003 Terminal
Services session. I have installed the drivers on the server and
changed the registry key referred to in this KB article
(http://support.microsoft.com/?kbid=302361). The printer icon appears
in the Terminal Service session's Printer's and Faxes folder. Printing
a test page produces no output, no errors and no entry in the local
machine's print queue. Epson do not provide any support for the
Terminal Server environment! Could it be a problem with their drivers?
Other local epson printers (dotmatrix/laser/inkjet) all work fine.
