I'm not sure if the risk for corruption of the profile becomes higher by keeping the cached copy, but I would certainly recommend deleting the cached copy of the roaming profile from the servers.
If you don't delete them, you will eventually store all users profiles on all servers, which could give you disk space problems.

I was talking about our new Citrix PS4 farm yesterday with a
consultant. He said that if we have roaming profiles (which we
do), that we should be deleting the local profile on the citrix
servers when the user logs off. He feels that leaving it there
is only an invitation for corrupting profiles and has no
benefits at all.
I'd like people's opinions as to whether this make sense or
not...
