Q. Can I use multiple monitors with my rdp session?
A. Unfortunately a RDP session does not support multiple monitors.
The session window itself can be stretched across multiple monitors
if it is not in Full Screen mode but it does not support multiple
monitors within the session. This is documented here:

A workaround is to open 2 different sessions and run each one on a
separate monitor.

We have many of our users here in our office that have been.
using multiple monitors (either through 2 physical monitors or 1
monitor and their laptop via a docking station). We have
recently moved to having all of our resources (code development,
etc.) moved to our servers and being accessed via Terminal
Services.
Previously, when our applications were installed locally, they
had the flexiblity of having applications being placed on both
monitors. However, since they are on the TS's, that is no
longer possible. All of the applications that they used to run
are now on the Remote Desktop window, essentially losing their
previous multiple monitor functionality.
Is there a way to configure the Remote Desktop client to allow
this, or is there a better client out there that will allow our
users to TS into our server, and have the ability to use the
connection on both of their local, physical monitors?
