I wish I had better news for you.
I made this mistake too. I never could get the default user stuff for
office out of the default user profile. I rebuilt.
As an aside: I avoid making the default user profile from an account
that is a local administrator. While the user might not have the
stroke to do anything with it, stuff shows up you really don't want
them seeing.
