Not sure what you mean by that "You shouldn't log into the server

I need user accounts for my workstation peoples.
Not to log into the *server*. Into the *domain*. Since you're talking about
roaming profiles, it's presumed you're talking about AD. If you don't have
AD,you can't use roaming profiles.
If Bob is a
workstation user I need an account for "Bob" on the server.
Yes, but Bob never logs into the server itself.
This way
I can set permissions for "Bob" for certain files that reside on the
server.
For the domain account, you do this as an administrator. You don't do it as
Bob. Bob can't set his own permissions anyway if he's a user :)
If I have a user account of my own on my XP machines named "Server
Dude" I need an account on the Server to match. What does it matter
if I log into the server with my user account??? It only has to be a
user account and not a Domain Admin account.
No - see above.
My question was though what would happen on the Server if lets say
that "Bob" is setup to use a roaming user profile on the server in
the profiles tab and Bob logs into an XP workstation.... I assume
that the profile on the XP box is copied to the server and this lets
"Bob" log into ANY workstation and have his profile follow
him.....correct?
But what happens if "Bob" logs into the Server??? Does he get a local
profile on the server or does his XP profile try to load on the
server as well?

If you define a roaming profile for a user, they get it wherever they log
in.

Quick question on Roaming Profiles.
This is what I want to do:
1.) When I log directly into the Server 2003 from the Server itself,
I have setup a basic default profile by configuring my settings that
I want on the server.
2.) I have 2 workstations (XPSP2) that I want to look the same no
matter what. I have configured my profile to be different on the
workstations than the server. If I add another workstation I want it
to look the same as the all the other workstations.
I know how to setup the profile path on the Server, but what I don't
know is, what will happen.
On the Server if I type \\SERVERNAME\Profiles\MY NAME in the
Profiles Tab what will happen when I log on to a workstation? Will
the workstation profile be copied to the server? The reason I ask is
because when I log on to the Server with a profile path typed I get
an error that the profile cannot be loaded. This is before I have
logged on to any workstations.
And what will happen the next time I log onto the Server from the
Server? Will my workstation desktop follow me to the Server? (This
is what I don't want)

My basic advice is to use a completely different login (with
different permissions, yet) for your server / admin work, than for
your workstations. You shouldn't log into the server with your
"user" account (nor should you be able to) and your "admin" account
shouldn't have a roaming profile, folder redirection, whatnot.
