There is no downgrade path from Enterprise to Standard.
You seem to have 2 choices:
1. Clean Installation of Standard.
2. Clean Installation of Enterprise, all data is lost so back-up is
essential.

Hello,
We downloaded the Beta version of Windows 2003 Server R2 a little while
back. I noticed the Trial version is Enterprise Edition. Will I be able to
install the full "Standard Version" over top of this to get rid of the
trial
period or will I have to install the Enterprise Edition (full ver) since
it's
on there?
Thanks in advance,
JH
