Dual-Boot Installation Using 2 Hard Disks

I am trying to set up a dual-boot Windows XP Pro/Windows Server 2003 Std Ed
system, only I would like to install each operating system to its own,
dedicated hard disk. Each disk is a master on a separate IDE channel. I
think I recall (maybe incorrectly?) that Windows must be installed on the
primary master hard disk. Will my envisioned setup work? Thanks in advance
to anyone who can help with this and save me a couple of hours' frustration.
Oh, and before anyone suggests it, running virtual machines is not an option
(tight budget).

Thank you!
