New network setup suggestions needed

Hi all.
Background:
One server: running SBS2000, including active dir, SQL,
Exchange, Cold Fusion & IIS (with websites) and ISA
server. There is also a struts application that connects
to the SQL server and runs off TOMCAT server.
It is also used for backups and as a file server. Things
are working smoothly, but recources on this box are
stretched.
Future:
2 servers: Client has purchased second server to alleviate
resource issues, and I am developing plan for network
expansion.
Some ideas for network configuration:
Move email and file server to new machine. Use a stable
version of linux and something like Postfix, sendmail, or
Exim as email server. This is the low cost option.
Another option would be to purchase licensed copy of
Windows XP for the new server and use it as a file server,
struts application server, cold fusion & tomcat server(for
web pages and struts app).
I could also use the new one as the domain controller and
the existing server as the child running windows XP and
the config above.
I would like to continue to use MS products but am miffed
that SBS can not be split across multiple servers without
breaking licensing rules.
