Multiple NICs and VPN

I've been reading through the post and I am still not sure what is the best
way to implement VPN for our company.
I've got a new DELL PowerEdge 750 with 2 NICs running Windows Server 2003
Standard Edition. Currently, I also have a Linksys Router/Gateway connected
to a DSL modem which is also providing DHCP until I get the server up and
running.
I would like to use the server for DHCP and DNS, so at minimum I need to
disable this feature on the Linksys router. However, it seems to make sense
to me to connect the DSL modem into one NIC and connect the other NIC into a
new Linksys Switch and configure the server for VPN with firewall support,
etc. Does this make sense, or should I just disable one of the NICs. If I
disable one of the NICs, how should I configure the server and Linksys router
for VPN?
