Rename mail server & email bounce address

I have a public server running windows 2003.
When I telnet into the server on port 25 and
in the email headers of my email from this
server it identifies itself as my servername.

The server is in workgroup mode, and not
joined to a domain. (Security related decision)
The email server also uses postmaster@servername
instead of a domain name.

I have 5 domains, 3 of which have email access.
How do I make the server identify itself as
mail.domain.com? and also change the bounce
message to use a different bounce address.
Since smtp can't have the same username
at each domain.
