Chris,
as Rod mentioned this is done on DHCP service.
Beside default gateway, you can also specify other services (e.g. DNS server
IP address) on DHCP service. All this information (e.g. DNS servers IP
addresses, default gateway IP address etc) is then passed to the client once
the client request IP address from DHCP server.
