Shadow Copy Doesn't seem to do much

I'm not sure what I haven't configured properly but I could use some help in
figuring it out. I enabled shadow copy service on one of the volumes of my
server. I set that up on Tuesday of last week. I scheduled it for nightly
copy service with unlimited space. I set up my clients on the new server
yesterday. I installed the shadow copy client on one of the workstations.
I copied a file off the server to the temp directory on the client
workstation to play it safe. I copied a new file with the same name up to
that location on the server. I right clicked on the file on the server and
under previous version it showed nothing. I tried deleting the file and
doing the same for the folder. No luck. The client basically has full
rights to this directory.
I'm sure there are plenty of things I don't understand about shadow copy
service but most of the stuff I found on MS' web page just state what the
purpose of it is - to retrieve previous versions or accidentally deleted
files. I couldn't find much that stated much of the technical
configurations or limitations.
If you can guess what I'md doing wrong, I would appreciate it. I'll be
happy to give more details if you can let me know what specifics I should
detail.
