Well, my advice would be to keep it online (but perhaps in another part of
the building in case you have an isolated fire in your server room).
Having only one domain controller really is asking for trouble.
Others may be able to give you specific advice on disaster recovery, but
whatever you choose to do, take the time to document and practice those
steps. Should the worst happen, you will be really glad you documented the
recovery process.
