A workstation OS will most likely work better for workstation tasks.

There is no guarantee that the application will work, and AV software is one
of the softwares that will most likely not work, unless you already use
software designed for servers.

Drivers for hardware is another "problem". Microsoft is not making the
drivers, that is something the hardware company do, and since DVD writers
are not common on a server, and it is not their targeted market, they will
maybe not spend time and money writing drivers that work on Windows Server
2003. The driver for Windows XP might work, but again, there is no
guarantee.
