Scripting xcopy command to replace Arcserve backup

My Boss doesn't want to use Arcserve anymore to perfrom backups. Instead he
wants us to use xcopy\or copy command to do daily backups.

Requirements:

Run xcopy of all our files\folders to a location that retains data for 7
days. Of course, you don't want to overwrite prvious night's backups so we
would need to tell it to specify a different location every day. Send the
results to an output log for troubleshooting.

Can this be done?
