Ok, first off - thanks for your easy to follow steps...i used telnet
years ago and didn't think to use it for this...here are all of my
answers to your questions and the results of the tests:
FROM INTERNAL:
220 CASVR2.ca2.local Microsoft ESMTP MAIL Service ready at Tue, 15 Sep
2009 15:25:10 -0600
FROM EXTERNAL:
Connecting To mail.[domain].com...Could not open connection to the
host, on port 25: Connect failed
EDGE OR SBS2008 SETUP:
It is setup with one Exchange server.
one thing i didn't know if it would effect things is the
router/firewall...it is the Cisco RVS4000 and i just realized the mode
it is setup in is in Gateway mode instead of Router mode...it is
working, from what i can tell, perfectly well for people on the LAN
side, but don't know if that is a problem i need to address...
I set up the Single Port Forwarding as follows:
ther router is at 192.168.2.1 and Ports 80, 443, 987 and 3389 are all
pointing to the server (192.168.2.2)...once i did this it allowed RDP
to come through but i don't know if the mail stopped at that point or
not...it worked when i first setup everything so i didn't feel a need
to test it after changes...

After setting up an SBS 2008 server last week i ran a test sending
mail to my gMail account and then replying back to the box. It worked
both ways no problem. But, i tested it last night and i can send
e-mail out to gMail and it delivers no problem...but messages sent

Any ideas? I have looked over logs, etc. but can't find a reason why
it isn't coming through...

Run that ExBPA as Allen suggested.
Also, are you familiar with how to use telnet to check if you Exchange
server is listening to the outside world? You will want to do this from the
inside, to see if it's listening, as well as from external, such as from
home or somewhere else. If you can post your domain name, we can check it
for you.
Did you setup an Edge or is SBS2008 setup with one Exchange server?
A quick step by step:
From inside the networkStart/Run, cmd
telnet
open SBSIpAddress 25
If something responds, then that's a good sign.
From external:Start/Run, cmd
telnet
open mail.yourdomainName.com 25
If something responds, then that's a good sign.
Was anything changed on your edge router as far as port remap rules? Port 25
needs to be port remapped to the listening Exchange server.
What errors do you see in the event logs?
