Redirected Folders Mystery - Partially Appearing on 1 of 2 Client Machines

This is a huge mystery and problem to me. I wouldn't have thought this could even happen:
I am running SBS2008 with all clients running Vista. All latest SP's installed on server and clients. I set up Redirected Folders for my users. One user has all of them on his desktop, but not on his laptop. If I access the server from his laptop through \\<servername>\c$\Users\FolderRedirections\<username>\My Documents I can see all the folders and documents properly. But if we try to access it through the Redirected Folders share (\\<servername>\RedirectedFolders\<username>\Documents) on the problem client computer, only some of the folders in his documents folder are visible.
It can't be a permission issue, because he has no problem access the files and folders from his desktop computer. It can't be a network problem, because he can access them from the laptop if we access the share differently (i.e., through the c$ admin share).
It's as if the Share itself is causing the problem, but that also doesn't seem possible, because it works perfectly on his desktop computer.
I did do one thing on the laptop that I think contributed to the problem, but I'm not sure it's related and even though I've changed the setting back, it hasn't helped: because his desktop hard drive is much larger than his laptop's, I wanted him to be able to select which folders would be available offline on the laptop. I initially selected not to force this in the local Group Policy on the laptop. But as part of troubleshooting, I've changed that back. Still only access to a small fraction of his My Documents folders.
How could this happen and how can I fix it? It's obviously not acceptable that he can't access his files from the laptop without making him a network admin to use c$.
Ultimately, after we solve this, I will still need to figure out how to let him select which folders within his My Documents folder will be available offline on his laptop.
I'm happy to provide more info if it will help in troubleshooting.
