Sorry, fat fingers hit send before I finished...

* shutdown and install RAID card.
* boot from device that allows you to upgrade teh RAID card firmware if you're not running the most current firmware (VERY few will be up to date new out of the box.)
* Connect new HD to the RAID card
* boot to original SBS
* Install driver(s) for new RAID card. Reboot almost certainly required.
* Make sure you can "see" the new (blank) disk in disk manager
* Shutdown, move the existing boot disk to the new RAID card
* boot to the RAID BIOS and create mirror (non-destructively)
* boot to Windows.

There are other ways around the drivers issue, but this is one I've used successfully fairly recently (with a modestly priced 3WARE card.)

Then go right ahead. You'll need to convert the existing disk to dynamic, and then create the mirror to the new disk, which must be at least as large as the current boot partition (if you're only mirroring the boot partition.)

I really prefer even an inexpensive hardware RAID to software RAID, and it really isn't that expensive to get a basic hardware RAID controller card. It's a multi-step process, since you'll need to get the drivers installed into the OS before you can boot off it at all, but that's fairly simple in a RAID-1 creating scenario:
* shutdown and install RAID card. Connect new HD to the RAID card
