There's two things being discussed here:
1) Folder Redirection
2) Offline Files
Configuring folder redirection is a good thing for the reasons you state -
keeping files on the server so they can be backed up. Additionally, this
allows users to log on to different machines and still have access to the
files on their desktop & my documents.
That being said, you do not need to have Offline Files enabled on PCs for
Folder Redirection to work. Offline Files allow users to access and work on
files on a network resource (e.g. server) when that resource isn't
available. Since desktops on the LAN should always have a connection to the
server (barring reboots, etc.) - you really don't need Offline Files
enabled. When you disable offline files on a PC, the PC won't synchronize
the server files to the local offline cache - users will just access the
server files directly.
Offline files are primarily intended for laptop users, so they can access
their files while out of the office, then sync back up when they return.

Let me ask this question since I thought I was doing this correctly.
The users Mydocuments folder, and his/her desktop contains the files in
which they use. I understand that all files should be on a server, etc.
but
in this company and others I have worked with, the users are always
putting
files in their mydocs and desktop, important files.
So this being the case, I redirected their mydocs and desktop items to
their
redirect folders on the server.
If this is not a good solution (I know its not the best), please advise.

previously opened/edit files have already sysn'd. There should be no
need.
It's going to sync to check for changes.
Is there an option to tell it to sync after business hours?

Dunno, but why would you want this on your desktops/LAN-connected
computers
anyway? I don't use offline files.
