According to your description, I understand that:
The "Route through e-mail" and "Store in a document library" options are
grayed out when you attempt to configure incoming fax routing method.
If I have misunderstood the problem, please don't hesitate to let me know.
From the description, I think that you may encounter the installation errorsuch as "Incoming and outgoing e-mail for Windows SharePoint Services are
not configured" when you perform the migration to SBS 2008. The issue may
result from the missing registry key for fax routing method. To correct the
issue, you may check:
Routing through e-mail is grayed
---------------------------------------
1. Open Fax Service Manager.
2. Right-click on Fax(local) and select properties.
3. Verify whether the option "Use these SMTP settings for the Route through
e-Mail..." is selected. If not, manually select it and click OK.
4. Checked the registry to make sure that there is value named "Messaging"
in HKLM\Software\Microsoft\SmallBusinessServer\Components.
5. If the value is missing, you may manually create the value:
Registry key path: HKLM\Software\Microsoft\SmallBusinessServer\Components
Value name: Messaging
type: REG_DWORD
Value data: 1 (Hex)
6. Rerun the Fax Wizard to check how it works.
Store in a document library is grayed

1. Check whether the registry key Internalwebsite is missing in
HKLM\Software\Microsoft\SmallBusinessServer\.
2. If the keys are missing from the registry, you may save the following
text to *.reg file and import it to your server.

3. If the key Internalwebsite exists, please double check that the
"FaxCenterName" is pointing to "Fax Center" (This key is also Case
Sensitive)
4. Open http://companyweb on the server and verify that "Fax Center" is
within companyweb Documents
5. If the Fax Center isn't create then you'll need to create a Fax Center
Document library and subfolders within Companyweb.
6. Also be sure to add the appropriate Columns: Name of sender, Caller ID,
Time received, Pages.
7. Then rerun the Fax Wizard to check how it works.
