I've just done one this weekend.
Original OEM but bought a NEW License.

Old Server was P4 with Dynamic Disks - new server QuadCore Xeon, hardware
Raid

Company has Custom Software and they wanted £ 3500 for Re-Install - just for
their software & tweaks

Swing and MS procedure was not an option. SBS 2008 not an option either.
Having previously done a Swing ***NOT*** a fan at all. This time not
appropriate because I wanted
the system COMPLETE with Installed Software & Tweaks.

I carried out this procedure on a TEST system first to give the client an
estimate & charged him for the time

Estimated downtime: 3-4 hours

(1) Varified Existing System is OK - no issues
(2) Imaged HDD using Ghost 2003 (yep DOS version)
(3) Booted copied SATA HDD on the old hardware & let it reboot to recognise
partition change
(4) Changed LAN cards for Loop back adaptors. Changed disk controller
"Standard IDE"
(5) Installed RAID Controller drivers in the old server (just software)
(6) Transferred the HDD to new Hardware
(7) Booted on the SATA controller - Cancel New hardware prompts (** Found
this helps **) and REBOOT
{You now have 3 days to sort out your installation!}
(8) Applied Motherboard drivers - remember to reboot when prompted
Remember this is Windows so REBOOT, REBOOT, REBOOT (prompted on or NOT - I
do it on each driver)
(9) Disable Loopback (don't uninstall) and change IP settings to LAN cards
(10) Run Internet connection wizzard. Now remove Loopback adaptors &
Re-Boot.
(11) Check everything - Device Manager, Company web, OWA, RWW, Workstation
Login
(12) Ghost from SATA to the RAID controller (let it reboot to recognise
partition change)
(13) Repeat 11
(14) Activated with NEW serial number
(15) Applied Service Packs

Total time 4h 20 mins (ghosting takes 30-40 mins each time, Service Packs
took 30mins)
