I'd rather just bounce the mail. It's an odd situation here, and I'd
be the one dealing with the redirected email (which I don't have
the time nor desire to do).

Create a Distribution Group, put the email address of the OLD/Terminated
employee in the address list, put the managers account as a member of
the group - all new email will be delivered to the manager.
If you get a few of these, and have several departments, just make a
departmental_term_emp_fwd dist group, then have old users email
addresses added to the dist group and the memeber(s) are just the
managers - this lets you archive the account and delete it while still
providing email service that the manager can take over.
