So you're an IT shop? And you're asking about a test network, so I'm assuming you also have a production network as well?
See responses in line below.
Since it's a test network...give a shot and come back with specific errors or issues is always the best way to go.

Small test network in my office: 1 SBS, 1 WS, 5 - 10 Win2k/XP client PCs.
Have been running SBS's since product came out. Latest SBS 2003 for more
than 4 years, and that has been running well on Intel 32 bit server MB
(except some backup problems). Restart once or twice per year has resolved
any strange things (nothing major).

Would like to upgrade to 1 SBS 2008 + 1 WS 2008 x64 / TS and replace most
PCs with simple TS clients. Have Proliant ML350 G5 hardware and MAPS
(licenses for SBS 2008 standard, WS 2008 x64, 10 CALs, 10 TS CALs, 10 MS
Office, etc). I have tested the Proliant server HW by running WS 2008 x64 as
Hyper-V server role (host), and anoher WS 2008 x64 in a virtual machine
(child). Saw no problems except some related to localization and Hyper-V
version.

Have read a fair amount of documentation, user discussions, etc, but I am
still uncertain and have a few questions:
1. Does it make sense to combine the SBS and the WS on the single Proliant
ML350 G5 ?
Since this is a test network, there should be no problem assuming that you have sufficient memory/storage space, etc.

2. Can the SBS 2008 std be the host / managing system (i.e. limits in TS,
virtual instances, etc.) ?
Having SBS 2008 act as the host/parent OS is not a supported config. There are documented issues with adding the HyperV role to the SBS server

3. Will a WS 2008 x64 based TS role work well in a virtual machine ?
Again, assuming sufficient memory and storage space it should work fine
4. Are SBS 2008 Standard + WS 2008 Standard + SBS CALs + TS CALs licenses
sufficient for this?
The Hyper V server is free download from MS, so if you load SBS and WS standard as guests, and assuming you don't have more than 10 connections, yes you should be fine.
5. A complete SBS on a physical machine and the WS TS in a virtual machine,
and not the other way around, right ?
Again, not recommended or supported to use SBS as the Host/parent for a virtual environment
6. SBS on a physical machine allows for easy access to com ports (for fax
server) and usb ports (backup etc), right ?
Yes, but there are 3rd party products that can do that for you in a HyperV environment.
7. No reason to run both SBS and WS TS in virtual machines ?
Already addressed
8. A second and third virtual machine in this setup can be installed with
additional licenced operating systems or linux, right ?
Again, assuming sufficient memory and storage, but since it's a test network, you can go with just minimum requirements for memory and storage.
