According to your description, I understand that:
Some quotas are listed with error saying "Account information unavailable
1.25gb No limit". You would like to know whether it is appropriate to
delete these entries.
If I have misunderstood the problem, please don't hesitate to let me know.
Yes, for leaved users it is all right to delete the quote entries on the
SBS server. When the user account is deleted from AD, the SID can no longer
resolve to the
name. This is the reason the SID displays as "Account Information
Unavailable." However, the SID will remain because the user still owns
files on the volume. This ownership is preserved, even though the user is
no longer present in AD. Thus, the Disk Quota UI is exhibiting the behavior.
To ensure that these unresolved SIDs corresponds to users that have been
removed, I suggest that you use the sid2name tool. To do so, please perform
the following steps:
1) Check the SID with sid2name. The SID should FAIL to resolve, which
confirms that the user is no longer present in AD. I will send the tool to
you via email (Jason@xxxxxxxxxxx). Because our email system will remove any
files with .exe extension, please rename it to sid2name.exe after you
download it.
To find out what user account name is associated with the SID
S-1-5-21-456721184-3344012123-1234567890-1234, type the following line at
the command prompt:
sid2name S-1-5-21-456721184-3344012123-1234567890-1234
2) If the SID is invalid, delete that SID from the quota UI as the user is
no longer present in AD.
As a "best practice", administrator should go through this procedure EVERY
time a user is deleted from AD.

By default, when you create a user with the Add user wizard the user will
be assigned disk quota according to the user template. It limits the My
document redirected folder size that is stored on the SBS server for each
user.
