Have you seen this document? (And by the way, just connect the test box to a spare hub or switch. It doesn't have to be able to see an actual LAN, it's enough to just be connected to anything).

Hi,
Can someone advise me please on recreating my SBS 2003 setup on a
spare machine so I can check I am able to restore everything should
the server conk out?
I have installed SBS 2003 from scratch on the spare machine. I don't
want to link to our network because then I would end up with two live
domains in the same subnet, with identical users, which I presume
would cause a problem. If the LAN is not connected though, it won't
proceed with the setup wizard.
The system state backup from the live server does not work on the
backup one - it ends up corrupting the setup. I presume this is
because the hardware setup is completely different?
Can I restore the exchange backup to the new server or will the
restore only work on the original server? If I can do it, what are the
requirements for ensuring the restore works? I can recreate most user
accounts using csvde although the SID's will be different.
Thank you for any help or pointing me towards the right direction.
