It's not a benefit, it's a requirement. The SBS DNS server is the only one on the planet (unless you have another AD DNS server in your network) that has any IP configuration information about the workstations. Various SBS services need this information.

If you specify another DNS server as secondary, either to SBS itself, or a workstation, then at some point the SBS DNS server will be slow to respond, the lookup will be made to the secondary, and *further* *lookups* *will* *use* *the* *secondary* even when the SBS is responding again, until a reboot or a timeout has expired. You may well have an SBS which doesn't know where its own workstations are for a while. The result is an intermittent failure of various SBS features which would be very difficult to troubleshoot if we didn't all know that the first place to look for this kind of trouble is in the DNS server specification. Hence the frequent request for people with problems to publish the output of ipconfig on the SBS and a workstation.

I think the default gateway is a red herring, possibly a misunderstanding. Except for special circumstances, when you will know exactly what you are doing and why, all machines in a network will use a single default gateway, which will obviously be the machine which has an Internet connection. With a two-NIC SBS, then the SBS LAN NIC will be the default gateway for the LAN clients, but not with one NIC in the SBS, which is clearly the way you're running.

Third, the *kind* of service offered by the carrier should have nothing to do with the ip settings on the ports of your devices, although it may introduce some complexity into the relationship between the LAN and the WAN, with devices to facilitate the hand off that I have never seen. ...
