Yes this will be a good solution. Things to check

1) Obviously you cant run the two on the same network at the same time so
you will have to build, switch off the old server and bring up the new one.

2) It might be easier to look into using the Exmerge tool if the users
mailboxes are >2gb

3) Disjoin the clients from the old domain before decommissioning the old
server

4) Remeber to have a backup and rollback plan so if it goes wrong you are
able to quickly run up the old server.

A Quick Checklist for you

1) Build the new SBS server to your requirements. Do this on a separate
network if possible. Remeber that the IP Address, Computername and Domain
name should all be the same. Ensure that this server is "Ready to rock" with
all patches applied and shares created/users set up etc.

2) Over a weekend or other period where downtime is acceptable, Stop Emails
coming into your server (Block port 25 or similar) ask all clients to quit
outlook and log off their machines. You have 72 hours to reopen port 25
before email might be dropped

3) Exmerge (if less than 2gb) or export from outlook (if more than 2gb) the
mailboxes you need to keep. You will need to use the outlook export method if
you have Public Folders

4) Transfer all data, including roaming profiles (if used) and network
shares, and for printers its handy to use the Print server migrator

5) Disjoin all client machines from old domain.

6) turn off old server and plug in new server

7) Run the CEICW to configure domain names and IP addresses etc,

8) Rejoin all client computers to the domain

9) Exmerge or outlook import the mailboxes.

10) Reopen port 25

11) Set up shares/printers etc

11)Test test and test some more.

I think i have got all the steps there. Just make sure you allways have a
rollback plan *just in case*
