I think you are grabbing the wrong end of the stick here.
No-one is advocating against RAID and you are taking it a little too extremely. I would contend the vast majority of SBS installations just don't need the kind of fault tolerance you are suggesting. It's like cars. No brake specialist would advise against ABS but who's risk is it anyway? Look at it this way. Both IBM and Dell sell a lot of server boxes. They both have a box with SBS preinstalled and RAID arrays are nowhere in sight. Nowhere. They are not alone. That means an awful lot of SBS installations out there without RAID and all doing quite well, thank you very much.
Now what you advise and why, as a consultant, is your business and I have no trouble with your advice but the key point is that the vast majority of SBS installations are done without formal consultants assisting them and they don't have RAID. You probably mainly deal with the larger end of town and with companies that probably need your advice. These folks are not going to quibble over $600 for a decent 3 drive array.
But tell that to 1000's of mom and pop businesses out there and they will look forlornly at you with misery in their eyes about every dollar they spend. I can't help that and nor can you. That's life.
