For RPC over HTTP (aka Outlook Anywhere), it's 443 for HTTPS.

simply type the "companyname.dyndns.org" address in the "Exchange
server address:" field when i've opened the necessary ports and
forwarded them to the exchange server?

An alternative could be if I could connect to the server via the so
called "SBS connection manager" and use the local address, would that
work? I guess I still would have to forward some ports.
Yep, but you don't need VPN for this.
