Sure. But if they knew everything they wouldn't have you there as a trusted
consultant. The fact that they've hired you indicates they realize there is
a limitation to their knowledge.

Yep...understood. I know what you're up against, but remember, it's OK to
say no to clients. Sometimes it's the right thing to do.

Why would you guys seperate the testing of a company's products from
the production network and/or production SBS server?

Pretty simple. Don't ___ where you eat.
Less vulgarly, you don't jeopardize the health or stability of your
production DC/Exchange/file&print/web/hatever boxen by using them as
a testbed. If they get hosed, it's a PITA to fix, and there will be
downtime, presuming it can be restored at all.
I find it a bit frightening that a company that makes software
doesn't know this, honestly. They need a lab/development network.
