Thank you for posting here.
According to your description, I understand that you want to remove the
instance of SharePoint in SQL Server 2005. Then, you want to install WSS
3.0 on SBS. If I have misunderstood the problem, please don't hesitate to
let me know.
Based on my research, we do not need to remove WSS 2.0 before we install
the WSS 3.0 on SBS. I suggest we try the following steps to see if we can
resolve this issue:
1. I suggest you install the WSS 3.0 on SBS thru the following document:
Installing Windows SharePoint Services 3.0 on a Server Running Windows
Small Business Server 2003

Note: This document shows you how to install Windows SharePoint Services
3.0 side-by-side with Windows SharePoint Services 2.0, so you can use the
exciting new features in Windows SharePoint Services 3.0 without breaking
the integration between Windows SBS and Windows SharePoint Services 2.0
2. After you install the WSS 3.0 on SBS, we can leave the WSS 2.0 alone. If
you still want to remove the WSS 2.0 from SBS, you can refer to the first
part (How to remove) of the following KB:

3. For uninstall instance of SQL server 2005, you can refer to the
