I have a Dell PE1900 running Windows SBS 2003 R2 and it currently has no battery backup (yes i know...!)...
Does anyone have any recommendations as to what to go for? I've seen APC mentioned on here before. The APC site recommends me this:

What about Management software? I see that it comes bundled with Powerchute - anything against this or should I use the Windows built in software to avoid problems?

I use APC Smart-UPSs on all of my servers. I'd go for a slightly larger one myself (1000VA probably but this is just a gut feel). My IT set-up at home of a 750VA APC Smart UPS, but the ones next to me here are the 1000VA versions - one per server.
One bit of advice I would offer in case you are tempted by any cheaper alternatives is to go for a smart-ups. A smart-ups (which is what you are looking at) will adjust for over and under voltages, whilst these shouldn't be too common they do happen. Spikes aside, we had an electrical problem in the building I'm based in last year where two phases got shorted together (yes, yikes) and as a result we had a number of bits of equipment destroyed but the servers were fine because the smart-ups compensated (compensated long enough for me to pull the power once I realised what was happening). I'm sure other manufacturers must do the equivalent, but APC Smart-UPS would always be my first choice.
I use the bundled powerchute software. Its okay, and certainly better than the windows built in alternative.
Looking at your follow up, yes any external equipment that is essential should also be covered by your ups. The one you go for should power your server, monitor (easy to forget but don't - been there done that), and any other essential peripherals. If you used external disks for data then I'd include them, whether its necessary for backup disks is more questionable but personally I'd power them off the same UPS.
