That's a Group Policy setting
Edit the Update Services GPO and go to 'Computer Configuration |Administrative Templates | Windows Components | Windows Update'
On the right panel click on 'Configure Automatic Updates'. Change the setting from 4 to 3. Event better create a new GPO only for the server, add the server computer there and give the setting 3. For the workstations you can have them on 4, to auto-install and reboot sometime after midnight.

Not sure why, but recently Windows Update is rebooting my server at night
after an update. In XP it is clear where to turn this setting off but I
don't know where it is located on the SBS server. Can someone help? It
really screws up the works when the server reboots itself.
