If Im not misstakened, to use an Out Of office reply, a mailbox/account
needs to enabled to work.

I would sugest seting an Out of office message.
To make them bounce just remove or change the ex.-employes email address
so that, his email address no longer exists in the domain.

We terminated an employee some time ago, and marked the account disabled
under Server Management/Users. When emails go to that account, they just
disappear, though, instead of bouncing back to the sender. (Emails do
bounce when sent to a bad email address in our domain).
How do I get them to bounce, preferably with a custom message that say
"Employee X is no longer with our company. For assistance, please contact
us at info@xxxxxxxxxxxxxx"?
