Then have the user take ownership on files in the security tab.
Then apply the SBS suggested security on each folder.

Well, I did that.  Took ownership (from the server) as domain admin,
then  added the user and made HIM the owner, then  went over a couple
tabs and set pesmisions of full control for that person.  Then back
out to the folder itself.
Each has got as much control of their folder as I think they can get.

Could be mising something, though.
