So permissions is an issue here.
Kind of hard for me with out looking, just imagination.

Then have the user take ownership on files in the security tab.
Then apply the SBS suggested security on each folder.

Well, I did that. Took ownership (from the server) as domain admin,
then added the user and made HIM the owner, then went over a
couple tabs and set pesmisions of full control for that person.
Then back out to the folder itself.
Each has got as much control of their folder as I think they can
get.
Could be mising something, though.
